Rasberry Cloud Meringues

The body
  • 6 Medium free-range eggs, whites only
  • 140g/5oz raspberries
  • 200g/7oz caster sugar


1) Switch on your oven to to 100C/200F/Gas ¼.

2) Take a baking tray cover with parchment paper or a silicone mat.

3) Remove the yoke and place the whites into a clean glass bowl and whisk until they form soft peaks when you try to remove your whisk from the bowl..

4) Next whisk in the caster sugar one spoon at a time until the mixture looks glossy and now the peaks are stiff (how rude!)

5) Now take the raspberries and mix them into the mix, bear in mind depending how much you mix this will change the appearance and colour, have fun.

6) Then place eight spoonfuls of the mixture, each about 8 cm wide onto the baking tray.

7) Finally bake in the oven for about 1½ hours, this depends on your oven size. Remove from the oven and let cool completely.

8) Enjoy, may we suggest fresh whipped cream to go with it!
